Creamy Chicken and Rice Bake

A warm and comforting casserole featuring tender chicken, fluffy rice, and a luscious creamy sauce, perfect for family dinners.

  • 2 cups cooked rice (preferably day-old)
  • 2 cups cooked chicken, shredded
  • 1 can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked rice, shredded chicken, cream of mushroom soup, chicken broth, milk, mixed vegetables, garlic powder, onion powder, salt, and pepper. Stir until evenly coated.
  3. Pour the mixture into a greased baking dish and spread evenly.
  4. Cover with foil and bake for 25 minutes.
  5. Remove the foil and continue to bake for an additional 10-15 minutes until bubbly and golden brown.
  6. Garnish with fresh herbs before serving.

Notes

For extra crispiness, add breadcrumbs or cheese during the last few minutes of baking. Store leftovers in an airtight container.
