Irresistibly Creamy Chicken Gnocchi

A comforting dish of tender gnocchi, succulent chicken, and vibrant spinach enveloped in a rich, creamy sauce.

  • 1 lb boneless, skinless chicken breast
  • 16 oz potato gnocchi
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Season the chicken with salt and pepper, cook for 6-7 minutes per side until golden and cooked through. Remove from skillet and set aside.
  2. Reduce heat to medium-low, add butter, and sauté minced garlic for about 1 minute until fragrant.
  3. Pour in the heavy cream, stirring continuously, and let it simmer for about 5 minutes until it thickens slightly.
  4. Toss in fresh spinach, stirring for about 2 minutes until wilted.
  5. Return chopped chicken and gnocchi to the skillet, gently toss to combine, and simmer on low for an additional 3 minutes.
  6. Remove from heat, sprinkle Parmesan cheese over the top, stir gently to combine.

Notes

For added flavor, feel free to use fresh herbs or substitute with other greens like kale.
