1.5 lbs boneless skinless chicken breasts or thighs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon olive oil
2 tablespoons butter
2 cups sliced mushrooms
3 cloves garlic, minced
3 cups fresh baby spinach or 1.5 cups frozen spinach, thawed and drained
1/2 cup chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
A pinch of red pepper flakes (optional)
Fresh parsley or thyme for garnish
Instructions
Pat the chicken breasts dry and season with salt, pepper, and paprika. Heat olive oil in a skillet over medium heat and cook chicken for 5-6 minutes on each side until cooked through. Remove and set aside.
In the same skillet, melt butter and add mushrooms. Cook for about 5 minutes until golden brown.
Stir in minced garlic and cook for 1 minute, then add spinach and toss until wilted.
Pour in chicken broth and bring to a simmer. Stir in cream and Parmesan, letting it thicken for 2-3 minutes.
Return chicken to skillet, spoon sauce over, and simmer for an additional 3-4 minutes. Garnish and serve hot.
Notes
For best flavor, use organic chicken and fresh mushrooms. Substitute with light cream for a lighter option.
