  • 1 pound boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 chopped onion
  • 1 cup egg noodles
  • 1 can cream of chicken soup
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Gather all ingredients: chicken, broth, vegetables, spices, and cream.
  2. Place the chicken, chicken broth, carrots, celery, onion, garlic powder, thyme, salt, and pepper into the crockpot.
  3. Cook on low for 6 hours or until the chicken is tender.
  4. Remove the chicken and shred it using two forks before returning it to the pot.
  5. Stir in the cream of chicken soup and heavy cream, followed by the egg noodles.
  6. Cook on high for an additional 30 minutes until noodles are tender.
  7. Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

Let the chicken reach room temperature before cooking for even results. The soup can be stored in the fridge for up to 4 days or frozen for 3 months.
