Creamy Chicken Pot Pie with Gnocchi

A modern twist on a classic favorite, this comforting dish combines tender chicken and vibrant vegetables with soft, chewy gnocchi in a luscious, creamy sauce.

  • 1 lb chicken breast, diced
  • 1 cup gnocchi
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme (optional)

Instructions

  1. In a large skillet, melt the butter over medium heat. Add diced chicken, garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes until chicken is no longer pink, stirring occasionally.
  2. Add frozen mixed vegetables and cook for an additional 3-4 minutes until heated through.
  3. Pour in chicken broth and bring to a gentle simmer for 1-2 minutes.
  4. Add gnocchi and cook according to package directions, about 3-5 minutes.
  5. Reduce heat to low and stir in heavy cream. Cook for an additional 2 minutes until heated through.
  6. Garnish with fresh thyme if using, and serve warm!

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat on the stovetop to maintain creaminess.
