  • 1 can (10 oz) diced tomatoes with green chilies
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips for serving
  • Shredded cheese for topping

Instructions

  1. In a large pot over medium heat, combine shredded chicken, black beans, corn, diced tomatoes (with their juices), chicken broth, cumin, chili powder, salt, and pepper.
  2. Raise the heat to medium-high and bring the mixture to a gentle boil.
  3. Once boiling, reduce heat to low and let it simmer for about 15 minutes.
  4. Slowly stir in the heavy cream and heat through for an additional 5 minutes.
  5. Serve hot, garnished with crispy tortilla chips, shredded cheese, and a dollop of sour cream.
