Creamy Gnocchi with Spinach and Feta

A comforting and easy-to-make dish featuring pillowy gnocchi in a rich creamy sauce with fresh spinach and tangy feta cheese.

  • 1 package gnocchi
  • 2 cups fresh spinach
  • 1 cup feta cheese, crumbled
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Bring a large pot of salted water to a boil and cook the gnocchi according to the package instructions, usually 2-3 minutes until they float. Drain and set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté for about a minute until fragrant.
  3. Toss in 2 cups of fresh spinach and cook until wilted, about 2-3 minutes.
  4. Pour 1 cup of heavy cream into the skillet and bring to a gentle simmer. Stir in crumbled feta cheese until it melts and integrates into the sauce.
  5. Add cooked gnocchi to the skillet and toss until well coated. Season with salt and pepper to taste.
  6. Plate the dish and sprinkle with freshly grated Parmesan cheese if desired. Serve immediately.

Notes

For a little heat, consider adding red pepper flakes to the sauce. This dish is best enjoyed fresh but can be stored in the fridge for up to 3 days.
