Creamy Hamburger Potato Soup

A hearty and creamy soup that combines ground beef, tender potatoes, and fresh vegetables for the ultimate comfort food.

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 potatoes, diced
  • 2 carrots, sliced
  • 1 cup corn (fresh, frozen, or canned)
  • 4 cups beef broth
  • 1 cup milk or cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheese, green onions

Instructions

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and sauté for another minute.
  2. Increase the heat and add the ground beef. Cook for 5-7 minutes until browned. Drain excess fat.
  3. Stir in diced potatoes, sliced carrots, and corn. Add the beef broth and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes until veggies are tender.
  5. Stir in the milk or cream and season with salt and pepper. Warm through for 5 minutes.
  6. Ladle into bowls, topped with shredded cheese and green onions if desired.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months. This soup gets better with time as flavors deepen.
