  • 1 pound ground beef (80/20 preferred)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups potatoes, diced (Yukon Gold or Russet)
  • 1 cup carrots, diced
  • 1 cup corn (frozen or canned)
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Brown the beef in a large pot over medium heat for 6-8 minutes, then drain excess fat.
  2. Add onion and garlic; sauté for 2-3 minutes until onion softens.
  3. Pour in beef broth, add potatoes, carrots, and corn; bring to boil, then simmer for 15-20 minutes.
  4. Stir in heavy cream, season with salt and pepper, then cook for 5 minutes over low heat.
  5. Serve hot, garnished with fresh parsley.

Notes
