  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté for 3-5 minutes until translucent.
  2. Add diced chicken and cook until browned, around 5-7 minutes.
  3. Pour in the chicken broth and bring to a gentle simmer.
  4. Stir in orzo pasta and cook according to package instructions, about 8-10 minutes.
  5. Add chopped spinach, lemon juice, and zest, cooking for an additional minute.
