Creamy Mashed Cauliflower

A lighter and healthier twist on classic mashed potatoes, featuring roasted garlic and Dijon mustard for a flavorful and creamy side dish.

  • 1 medium head cauliflower (2 pounds, chopped)
  • 2 tablespoons melted unsalted butter (or olive oil for a vegan version)
  • 7 roasted garlic cloves
  • to ¼ teaspoon Dijon mustard
  • ¼ to ½ teaspoon sea salt (adjust to taste)
  • Freshly ground black pepper
  • Chives (for garnish, optional)

Instructions

  1. Chop the cauliflower into bite-sized pieces.
  2. Bring a large pot of salted water to a boil and add the cauliflower; boil until knife-tender, about 10 minutes.
  3. Drain the cauliflower in a colander, shaking off any excess water.
  4. Transfer the drained cauliflower to a food processor and add melted butter, roasted garlic, Dijon mustard, salt, and black pepper.
  5. Blend until completely smooth and creamy, adjusting seasoning as necessary.
  6. Transfer to a serving bowl, garnish with chives, and serve.

Notes

For best results, ensure the butter is at room temperature. Avoid over-blending to prevent a gummy texture.
