Creamy Pea and Bacon Pasta Salad

A delightful blend of crispy bacon, creamy dressing, and fresh peas, perfect for family gatherings and picnics.

  • 12 oz pasta shell noodles
  • 1 lb thick-cut bacon (diced)
  • 2 cups frozen peas (thawed)
  • 2/3 cup freshly grated parmesan cheese
  • 1 cup mayonnaise
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 1/2 tsp granulated sugar
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 3/4 tsp garlic powder
  • 3/4 tsp onion powder

Instructions

  1. Bring a large pot of salted water to a boil. Add your pasta shell noodles and cook until al dente, about 9-11 minutes.
  2. While the pasta is cooking, heat a large skillet over medium heat. Add the diced bacon and cook until crispy, about 6-8 minutes.
  3. Once cooked, drain the pasta in a colander and rinse under cool water.
  4. In a small mixing bowl, combine the mayonnaise, olive oil, apple cider vinegar, sugar, salt, black pepper, garlic powder, and onion powder. Whisk until smooth and creamy.
  5. In a large mixing bowl, add the cooled pasta, crispy bacon, and thawed peas. Pour in the dressing and toss gently to combine.
  6. Cover tightly and refrigerate for at least 2-3 hours before serving.

Notes

Store leftovers in an airtight container in the fridge for up to four days and serve cold.
