Instructions

  1. In a large skillet, heat the olive oil over medium-high heat until it shimmers (about 1-2 minutes).
  2. Season both sides of the pork chops with garlic powder, salt, and pepper. Let them sit briefly to absorb the flavors.
  3. Add the seasoned pork chops to the skillet, cooking for about 4-5 minutes on each side until golden brown and a meat thermometer reads 145°F.
  4. Remove the pork chops from the skillet and let them rest on a plate.
  5. Pour in the chicken broth, scraping any brown bits from the pan, and bring to a simmer (about 2-3 minutes).
  6. Stir in the cream cheese until fully melted and incorporated.
  7. Return the pork chops to the skillet, spooning the creamy sauce over the top, and simmer for another 1-2 minutes.
  8. Plate the pork chops, drizzle with the sauce, and garnish with parsley if desired. Serve immediately.

Notes

For best results, allow the cream cheese to sit at room temperature for 30 minutes before use to achieve a smooth sauce. Store leftovers in an airtight container in the fridge for up to 3 days.
