Creamy Sausage and Peppers Pasta

A cozy family favorite that combines hearty Italian sausage, vibrant bell peppers, and a silky cream sauce for a comforting pasta dish in under 30 minutes.

  • 8 oz short pasta (penne, rigatoni, or fusilli)
  • 1 tablespoon extra virgin olive oil
  • 12 oz Italian sausage, casings removed
  • 1 medium yellow onion, thinly sliced
  • 2 bell peppers (red, orange, or yellow)
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Cook the pasta in salted water until al dente; reserve 1/2 cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat and brown the sausage for 5-7 minutes.
  3. Sauté onion and bell peppers in the same skillet for 5-7 minutes; add garlic and cook for 1 minute.
  4. Deglaze the pan with reserved pasta water and let simmer for a minute.
  5. Stir in heavy cream and simmer for 2-3 minutes until thickened.
  6. Add grated Parmesan cheese and browned sausage, mixing well.
  7. Combine pasta with sauce, adding more pasta water if needed to adjust consistency.
  8. Garnish with fresh parsley or basil and serve hot.

Notes

For a creamier sauce, let it simmer a bit longer. Don’t overcook the pasta—al dente is key!
