Creamy Spinach Chicken Gnocchi

A comforting and creamy dish featuring tender gnocchi, sautéed chicken, and fresh spinach.

  • 1 lb gnocchi
  • 1 lb boneless, skinless chicken breast
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • Pinch of nutmeg

Instructions

  1. Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions (about 2-3 minutes). Drain and set aside.
  2. In a large skillet over medium heat, heat 1 tablespoon of olive oil. Add cubed chicken breast, season with salt and pepper, and cook for about 6-8 minutes until golden brown.
  3. Add the fresh spinach with the chicken and cook for another 2-3 minutes until wilted.
  4. Lower the heat to medium-low and pour in 1 cup of heavy cream. Stir in the grated Parmesan while allowing it to melt. Season with garlic powder and add a pinch of nutmeg.
  5. Add the gnocchi to the skillet and gently fold to coat them in the creamy sauce. Heat through for about 2 minutes.
  6. Spoon the gnocchi into bowls, garnishing with extra Parmesan and freshly cracked black pepper.

Notes

For best results, use high-quality ingredients and don’t overcook the spinach. This dish is best enjoyed fresh but can be stored in the fridge for up to 3 days.
