  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 2 cups fresh baby spinach
  • 3/4 cup freshly grated Parmesan cheese
  • 1 tbsp fresh basil, chopped

Instructions

  1. Melt butter in large skillet over medium heat. Sauté shallot 2 minutes until translucent.
  2. Add garlic and sun-dried tomatoes; cook 1 minute until fragrant.
  3. Pour in cream and broth, stirring to combine. Bring to simmer.
  4. Season with Italian seasoning, salt, pepper, and red pepper flakes. Simmer 5 minutes to thicken slightly.
  5. Stir in spinach until wilted (about 2 minutes).
  6. Remove from heat. Gradually whisk in Parmesan until melted and smooth.
  7. Finish with fresh basil. Adjust seasoning if needed.
