  • 1 medium butternut squash, peeled and cut into 1-inch cubes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika (smoked for deeper flavor)
  • Salt and pepper to taste
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons honey
  • 1 teaspoon red pepper flakes
  • 1 tablespoon freshly squeezed lemon juice
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cubed butternut squash with olive oil, garlic powder, paprika, salt, and pepper until evenly coated.
  3. Spread the seasoned squash on a baking sheet in a single layer.
  4. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
  5. While the squash bakes, mix together the feta, honey, red pepper flakes, and lemon juice in a bowl until smooth.
  6. Once the squash is finished, let it cool for a few minutes and then drizzle the hot honey feta sauce over the top.
  7. Garnish with chopped parsley and serve warm.

Notes

Soak squash cubes in cold water for 30 minutes before roasting for extra crispiness; store leftovers in an airtight container for up to 3 days.
