  • 1 cup shredded coconut
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • Soft taco shells
  • Lettuce, for garnish
  • Avocado, for garnish
  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon hot sauce
  • Cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Set up your breading station with bowls of flour, beaten eggs, and a mixture of shredded coconut and panko breadcrumbs.
  3. Dip each shrimp in flour, then the beaten eggs, and finally in the coconut and panko mixture.
  4. Place the breaded shrimp on a lined baking sheet, spaced evenly.
  5. Bake for 15 minutes until golden brown and crispy.
  6. Prepare the spicy lime sauce by mixing mayonnaise, lime juice, and hot sauce in a bowl.
  7. Assemble the tacos with crispy shrimp, lettuce, avocado, and drizzle with spicy lime sauce.
  8. Garnish with fresh cilantro and serve.

Notes

For best results, use high-quality mayonnaise and fresh lime juice. Store leftovers in an airtight container in the fridge for up to 2 days.
