Crispy Fried Polenta with Marinara Sauce

A deliciously crispy treat made from golden fried polenta served with a rich marinara sauce, perfect for gatherings or a cozy night in.

  • 1 tube (18 oz) prepared polenta (or 3 cups cooked, cooled polenta)
  • 1/2 cup olive oil for frying (extra virgin recommended)
  • 1 cup marinara sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Red pepper flakes for spice

Instructions

  1. Slice the polenta into 1/2-inch thick rounds. If using homemade polenta, cool in the refrigerator and cut into desired shapes.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Carefully place the slices of polenta in a single layer in the skillet. Fry for about 3-4 minutes on each side or until golden brown and crispy.
  4. Remove fried polenta and drain on a paper towel-lined plate. Sprinkle with salt and pepper while hot.
  5. Warm the marinara sauce in a small saucepan over medium heat.
  6. Serve the crispy polenta hot with marinara sauce on the side or drizzled over the top. Garnish with Parmesan, fresh basil, or red pepper flakes.

Notes

For best results, allow polenta to chill for at least an hour before slicing. Store leftovers in an airtight container in the refrigerator for up to 3 days.
