Crispy Oven-Baked Beef Quesadillas

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 tablespoons tomato paste
  • ½ cup corn (canned or frozen)
  • ½ cup beans (canned or black beans)
  • ¼ cup water
  • 6 large flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a skillet over medium heat, add ground beef and cook until browned, about 5-7 minutes. Drain excess fat.
  3. Stir in taco seasoning, tomato paste, corn, beans, and water. Simmer for 2-3 minutes.
  4. Lay the flour tortillas on a clean surface. Layer the beef filling and cheese on one half of each tortilla.
  5. Fold each tortilla in half, pressing down gently. Brush both sides with olive oil.
  6. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes, flipping halfway through until golden brown.
