2 medium zucchinis, cut into fries
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon paprika
Salt and black pepper to taste

Instructions
Wash and dry zucchinis, then cut them into fry shapes, about 1/4 inch thick.
Set up the breading station with flour in one bowl, beaten eggs in another, and combine panko breadcrumbs with Parmesan, garlic powder, paprika, salt, and pepper in a third bowl.
Preheat the oven to 425°F (220°C).
Spread parchment paper on a baking sheet.
Coat each zucchini piece by dredging in flour, dipping in eggs, and rolling in the panko mixture.
Arrange the coated zucchini fries in a single layer on the baking sheet and lightly spray with olive oil.
Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.
