Crispy Parmesan Garlic Zucchini Fries

A delicious twist on a classic snack, these crispy zucchini fries are easy to prepare and full of flavor.

  • 2 medium zucchinis, cut into fries
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Olive oil spray

Instructions

  1. Wash and dry zucchinis, then cut them into fry shapes, about 1/4 inch thick.
  2. Set up the breading station with flour in one bowl, beaten eggs in another, and combine panko breadcrumbs with Parmesan, garlic powder, paprika, salt, and pepper in a third bowl.
  3. Preheat the oven to 425°F (220°C).
  4. Spread parchment paper on a baking sheet.
  5. Coat each zucchini piece by dredging in flour, dipping in eggs, and rolling in the panko mixture.
  6. Arrange the coated zucchini fries in a single layer on the baking sheet and lightly spray with olive oil.
  7. Bake for 20-25 minutes until golden brown and crispy, flipping halfway through.

Notes

For extra flavor, consider adding cayenne for heat or marinating the zucchini in olive oil and spices before breading.
