Crispy Smashed Potatoes

Golden, crispy-on-the-outside, fluffy-on-the-inside smashed potatoes with irresistible crunchy edges – the perfect side dish that’s fun to make and even better to eat!

Ingredients

2 pounds small yellow potatoes: Choose firm, unblemished potatoes for the best results.

2 teaspoons sea salt (divided): This will enhance the flavor throughout the dish.

2 tablespoons extra-virgin olive oil (plus more for the pans): Opt for a high-quality oil for a richer taste.

1½ teaspoons garlic powder: This adds a flavor boost and aroma.

¾ teaspoon onion powder: For a hint of sweetness that complements the garlic.

Freshly ground black pepper: To taste.

1 tablespoon finely chopped fresh herbs (parsley, chives, and/or dill): Fresh herbs give a delightful brightness to each bite.

Flaky sea salt (optional): For that final touch of gourmet flair.

Parmesan cheese (optional): Because who can resist the umami goodness of cheese?

Instructions

  1. Preheat oven to 450°F (230°C). Line baking sheet with parchment.
  2. Boil potatoes in salted water 15-20 minutes until fork-tender. Drain well.
  3. Arrange potatoes on baking sheet. Using glass or measuring cup, gently press each potato to flatten (about 1/2-inch thick).
  4. Drizzle with oil. Sprinkle with salt, pepper, garlic powder and rosemary.
  5. Bake 25-30 minutes until deeply golden and crispy. Flip halfway.
  6. If using, sprinkle with Parmesan last 5 minutes of baking.
  7. Garnish with parsley and serve with sour cream for dipping.

Notes

  • For extra crispiness, broil 2-3 minutes at the end
  • Add 1/2 tsp smoked paprika for depth of flavor
  • Can prepare potatoes through smashing 1 day ahead
  • Leftovers reheat well in air fryer at 400°F (200°C) for 5 minutes
