  • 1/4 teaspoon salt (for sweating the zucchini)
  • 1 large egg
  • 1/4 cup all-purpose flour (or breadcrumbs or gluten-free flour)
  • 1 clove garlic, minced
  • 1/4 teaspoon salt (for the batter)
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped scallions or parsley (optional)
  • 2 tablespoons crumbled feta or Parmesan (optional)
  • 2 to 3 tablespoons olive oil (for frying)
  • 1 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1/2 teaspoon lemon zest
  • 1 small garlic clove, finely grated (for sauce)
  • 1/8 teaspoon salt (for the sauce)

Instructions

  1. Grate the zucchini and toss with 1/4 teaspoon salt, letting it drain for about 10 minutes.
  2. After draining, mix the zucchini with egg, flour, minced garlic, 1/4 teaspoon salt, and black pepper.
  3. Heat olive oil in a skillet over medium heat and scoop 2 tablespoons of mixture into the pan, frying for 2-3 minutes on each side.
  4. For the sauce, whisk Greek yogurt, lemon juice, lemon zest, grated garlic, and 1/8 teaspoon salt in a small bowl and chill.
  5. Serve fritters warm with a dollop of lemon yogurt sauce.

Notes

For extra flavor, add your favorite herbs or cheese. Ensure zucchini is well-drained to avoid sogginess.
