Crock Pot Beef and Broccoli

Tender beef and crisp broccoli in a rich, savory-sweet sauce that tastes just like takeout – all made effortlessly in your slow cooker for an easy weeknight dinner.

Ingredients

2 pounds sirloin steak or boneless beef chuck roast, sliced thin

1 cup beef broth

1/2 cup low-sodium soy sauce

1/4 cup brown sugar

1 tablespoon sesame oil

3 garlic cloves, minced

4 tablespoons cornstarch

4 tablespoons water

1 bag (12 ounces) frozen broccoli florets

Cooked white rice, to serve (optional)

Instructions

  1. Toss beef slices with 1/4 cup cornstarch and pepper until coated.
  2. Heat oil in skillet over high heat. Quickly sear beef in batches (1 min per side) and transfer to crockpot.
  3. Whisk broth, soy sauce, brown sugar, sesame oil, garlic, ginger and pepper flakes. Pour over beef.
  4. Cover and cook on LOW 3 hours or HIGH 1.5 hours.
  5. Add broccoli, cover and cook 30 more minutes on HIGH.
  6. Stir cornstarch slurry into sauce to thicken. Serve over rice garnished with sesame seeds and green onions.

Notes

  • For crispier broccoli, steam separately and add before serving
  • Slice beef when partially frozen for thinnest cuts
  • Double sauce ingredients if you prefer extra sauce for rice
  • Leftovers keep refrigerated for 3 days
