Crock Pot Beef Stew

A hearty and comforting beef stew that simmers in the Crock Pot, perfect for busy families and cold nights.

  • 2 packages dry onion soup mix
  • 1/2 teaspoon paprika
  • 2 pounds lean beef stew meat, cut into bite-sized pieces
  • 5 medium potatoes, peeled and diced
  • 2 to 3 cups baby carrots
  • 1 small yellow onion, chopped
  • 2 cans cream of celery soup (10 ounces each)
  • 1 cup ketchup or tomato sauce

Instructions

  1. Begin by peeling and dicing your potatoes and chopping the onion.
  2. Trim any excess fat off the beef and cut it into bite-sized pieces. Season the beef with salt and pepper.
  3. In your Crock Pot, add the beef, vegetables, onion soup mix, paprika, cream of celery soup, and ketchup or tomato sauce. Stir gently to combine.
  4. Set your Crock Pot to low heat and layer your ingredients starting with the meat, then potatoes, and carrots.
  5. Sprinkle the onion soup mix over the top, add the cream of celery soup and ketchup, and cover.
  6. Cook on low for 6-8 hours until beef is tender and vegetables are soft. Optionally, add frozen peas in the last 30 minutes.

Notes

Adds extra vegetables like mushrooms or bell peppers for more flavor. Consider seasoning the beef the night before for enhanced taste.
