Deliciously Easy Crockpot Balsamic Chicken with Mushrooms

A comforting and effortless crockpot recipe featuring tender chicken breasts cooked in a tangy balsamic sauce with earthy mushrooms.

  • 4 pieces boneless, skinless chicken breasts (about 1 1/22 lbs)
  • 1 cup balsamic vinegar
  • 1 cup chicken broth
  • 2 cups sliced mushrooms
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in a single layer in the crockpot.
  2. Whisk together balsamic vinegar, chicken broth, garlic powder, dried oregano, and a pinch of salt and pepper in a bowl.
  3. Pour the balsamic mixture evenly over the chicken.
  4. Scatter the sliced mushrooms over the top.
  5. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.
  6. If desired, thicken the sauce by whisking cornstarch with cooking liquid and cooking uncovered on HIGH for an additional 10-15 minutes.
  7. Serve warm over mashed potatoes, rice, or crusty bread.
