Crockpot Chicken with Brown Sugar

  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1 tablespoon garlic, minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Prepare the Sauce: In a medium-sized bowl, whisk together the brown sugar, soy sauce, ketchup, apple cider vinegar, minced garlic, ground ginger, and black pepper until smooth and well-combined.
  2. Add to Crockpot: Place the chicken thighs into your crockpot in a single layer. Pour the sauce mixture over the chicken, ensuring all the chicken is evenly coated.
  3. Slow Cook: Set the crockpot to cook on low for 360-420 minutes or on high for 180-240 minutes. You’ll know the chicken is ready when it becomes tender and easily shreds with a fork.
  4. Thicken the Sauce: About 30 minutes before the chicken is done cooking, mix the cornstarch and water in a small bowl to create a slurry. Slowly stir this mixture into the crockpot, allowing the sauce to thicken.
  5. Serve:= Once the sauce has thickened, shred the chicken using two forks or leave it whole for a stunning presentation. Serve it over steamed rice or noodles, drizzled generously with that luscious sauce.

Notes

For better flavor, use high-quality soy sauce and organic chicken. Add sesame seeds or chopped green onions for garnish.
