Savory Crockpot Chicken Cacciatore

  • 2 lbs Boneless Skinless Chicken Thighs
  • 1 lb Baby Red Potatoes, halved
  • 2 Carrots, sliced
  • 1 Onion, chopped
  • 1 Bell Pepper, chopped
  • 8 oz Portobello Mushrooms, sliced
  • 28 oz Fire-Roasted Canned Tomatoes
  • 1 cup Beef or Vegetable Broth
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp dried herbs de Provence
  • 1/2 cup Black Olives, pitted
  • 2 tbsp Olive Oil

Instructions

  1. Rub the chicken with paprika, garlic powder, onion powder, salt, and pepper.
  2. Sear the chicken in a skillet with olive oil over medium heat until golden brown.
  3. Prepare the crockpot by combining tomatoes, broth, and herbs, then add the potatoes, carrots, onions, and bell peppers.
  4. Layer the seared chicken on top of the vegetables in the crockpot.
  5. Cover and cook on low for 8 hours or high for 4 hours.
  6. Finish by adding mushrooms and olives in the last 30-45 minutes of cooking.

Notes

Leftovers can be stored for up to 3 days in the fridge or 2-3 months in the freezer.
