  • 1 cup chicken broth
  • ½ cup sun-dried tomatoes (oil-packed), chopped + 2 tbsp oil
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp red pepper flakes
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 cups fresh spinach
  • Fresh basil for garnish

Instructions

  1. Sear Chicken: Heat sun-dried tomato oil in skillet. Season chicken and brown 3-4 minutes per side.
  2. Slow Cook: Place chicken in crockpot. Add broth, sun-dried tomatoes, garlic, and spices. Cook on LOW 4-5 hours.
  3. Finish Sauce: Remove chicken. Stir in cream, Parmesan, and spinach until wilted. Return chicken to sauce.
  4. Serve: Garnish with fresh basil. Excellent over pasta, rice, or mashed potatoes.
