Crockpot Meatloaf with Savory Onion and Swiss Melt

A tender, juicy meatloaf slow-cooked to perfection in your crockpot, topped with caramelized onions and melted Swiss cheese for a comforting, flavorful twist on the classic.

Ingredients

  • 1 lb ground beef

    1/2 cup breadcrumbs

    1 large egg

    1 packet French onion soup mix

    1/2 cup Swiss cheese, shredded

    1/2 cup milk

    Salt and pepper to taste

Instructions

  1. Line crockpot with parchment paper or foil for easy removal. Lightly grease.
  2. In skillet, melt butter over medium-low heat. Add onions and brown sugar. Cook 15-20 minutes until caramelized, stirring occasionally.
  3. In large bowl, mix all meatloaf ingredients until just combined (don’t overmix). Shape into loaf and place in crockpot.
  4. Spread optional ketchup glaze over top if using. Cover and cook on LOW 6-7 hours or HIGH 3-4 hours.
  5. 30 minutes before serving, top with caramelized onions and Swiss cheese. Cover until cheese melts.
  6. Use parchment/foil to lift meatloaf out. Rest 10 minutes before slicing.

Notes

  • For gluten-free version, use gluten-free breadcrumbs
  • Add 1/4 tsp smoked paprika to meat mixture for depth
  • Leftovers make excellent sandwiches
  • Can substitute ground turkey, but add 1 tbsp olive oil
