  • 1 lb Beef Strips (Sirloin or Flank Steak)
  • 3 Bell Peppers (mixed red, yellow, and green)
  • 1 Onion (Sweet or Yellow)
  • 3 cloves Garlic (Freshly Minced)
  • 1 cup Beef Broth (low-sodium)
  • 1/4 cup Soy Sauce (low-sodium)
  • 2 tbsp Cornstarch
  • 1 inch Ginger (Fresh or Ground)
  • Salt & Pepper to taste
  • Optional Toppings: Green onions and sesame seeds

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together the beef broth, soy sauce, minced garlic, cornstarch, ginger, and a touch of pepper.
  2. Assemble in the Crockpot: Place the beef strips in the crockpot. Layer on the sliced onions and bell peppers, then pour the sauce over the top.
  3. Slow Cook: Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours until the beef is fork-tender.
  4. Finish and Serve: Stir well, and for a thicker sauce, cook uncovered for an additional 15-30 minutes before serving over rice, garnished with green onions and sesame seeds.
