  • 6 large croissants (about 1 lb), torn into pieces
  • 1 lb breakfast sausage, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 8 large eggs
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 tsp Dijon mustard
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ cup chopped fresh chives (plus more for garnish)
  • ¼ cup grated Parmesan cheese (for topping)

Instructions

  1. Grease a 9×13-inch baking dish. Spread half the croissant pieces in the dish.
  2. Sprinkle with cooked sausage and 1 cup cheddar cheese. Top with remaining croissant pieces.
  3. In a large bowl, whisk together eggs, milk, cream, mustard, and seasonings until well combined.
  4. Pour egg mixture evenly over the croissant layers. Press down gently to help croissants absorb liquid.
  5. Sprinkle remaining 1 cup cheddar cheese and Parmesan over top. Cover and refrigerate overnight (or at least 4 hours).
  6. Preheat oven to 350°F (175°C). Let casserole sit at room temperature while oven heats.
  7. Bake uncovered for 45-55 minutes until golden brown and center is set.
  8. Let rest 10 minutes before serving. Garnish with fresh chives.

  • For a lighter version, substitute half-and-half for heavy cream
