Crumble Italian Sausage Gnocchi Soup

A comforting soup featuring tender potato gnocchi and savory Italian sausage in a rich, creamy broth.

  • 1 pound Italian sausage
  • 1 package gnocchi
  • 1 can diced tomatoes
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned, about 5-7 minutes. Break it into crumbles as it cooks. Drain excess fat.
  2. Add the chopped onion and minced garlic to the pot, cooking for an additional 3-4 minutes until the onion is translucent.
  3. Stir in the diced tomatoes, broth, and Italian seasoning. Bring to a simmer.
  4. Toss in the gnocchi and cook according to package directions, about 2-3 minutes.
  5. Reduce heat and gently stir in the heavy cream, adding salt and pepper to taste. Cook for a few more minutes until heated through but not boiling.
  6. Serve while warm, garnished with fresh basil.

Notes

This soup can be stored in the fridge for up to 4 days or frozen for about 3 months. Add more broth if the soup becomes too thick.
