Crunchy Asian Cabbage Slaw with Addictive Sesame Dressing

  • 4 cups green cabbage, thinly sliced
  • 2 cups red cabbage, thinly sliced
  • 1 cup shredded carrots
  • 3 green onions, thinly sliced
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons low sodium soy sauce
  • 1½ tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon fresh grated garlic
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon Dijon mustard (optional)
  • 1 tablespoon sesame seeds

Instructions

  1. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, honey or maple syrup, garlic, ginger, and Dijon mustard until smooth and well combined.
  2. In a large bowl, combine the green cabbage, red cabbage, shredded carrots, and green onions. Toss gently to blend.
  3. Pour the dressing over the cabbage mixture and toss until evenly coated.
  4. Let the slaw sit for 10-15 minutes to allow flavors to meld.
  5. Before serving, top with sesame seeds for added crunch.
  6. Enjoy the slaw chilled or at room temperature!
