  • 2 large English cucumbers, thinly sliced
  • 2 ripe avocados, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro or dill, chopped
  • For the Dressing:
  • 3 tbsp lime juice (about 2 limes)
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey or agave
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Prep Vegetables: Combine cucumbers, avocado, red onion, tomatoes, and herbs in large bowl.
  2. Make Dressing: Whisk together lime juice, olive oil, honey, salt, pepper, and red pepper flakes.
  3. Toss Gently: Pour dressing over salad and toss carefully to coat without mashing avocado.
  4. Chill: Refrigerate for 15 minutes to let flavors meld (optional).
  5. Serve: Garnish with extra herbs and lime wedges.

Notes

  • Prep tip: Add avocado just before serving to prevent browning
  • Make ahead: Prep dressing and chop veggies separately, combine last minute
  • Variations: Add crumbled feta, grilled corn, or chickpeas for protein
  • Storage: Best eaten fresh but keeps refrigerated 1 day (avocado will darken)
