Decorated Cookies with Royal Icing

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 egg whites
  • 4 cups powdered sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and baking powder, and sift together.
  3. Cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  5. Gradually incorporate the dry mixture into the wet mixture, stirring on low until just combined.
  6. Turn the dough onto a floured surface and roll out to 1/4 inch thick.
  7. Cut into desired shapes using cookie cutters and place on a lined baking sheet.
  8. Bake for 8-10 minutes until the edges are lightly golden. Let cool on a wire rack.
  9. For the royal icing, beat egg whites until frothy, then gradually add powdered sugar and lemon juice until smooth and glossy.
  10. Transfer royal icing to piping bags and decorate the cooled cookies. Let the icing set for several hours or overnight.

Store decorated cookies in an airtight container for freshness; they can last up to a week at room temperature.
