Stir-Fried Glass Noodles

A beautiful and flavorful dish featuring sweet potato noodles tossed with marinated beef and fresh vegetables, all brought together with a savory soy sauce glaze.

Ingredients

  • Sweet Potato Noodles
  • Marinated Beef (flank steak or sirloin)
  • Mushrooms (shiitake or button)
  • Carrots (julienned)
  • Spinach (fresh baby)
  • Bell Peppers (red, yellow, or green)
  • Onions (yellow or sweet)
  • Soy Sauce (low-sodium)
  • Sesame Oil
  • Garlic (fresh cloves)
  • Sugar
  • Sesame Seeds (toasted for garnish)

Instructions

  1. Soak sweet potato noodles in warm water for about 30 minutes until softened.
  2. In a large pan or wok, heat sesame oil over medium heat and sauté minced garlic until fragrant.
  3. Add marinated beef and cook until browned.
  4. Stir-fry mushrooms, carrots, bell peppers, and onions until tender yet crisp.
  5. Drain noodles and add to the pan with spinach, soy sauce, and sugar, mixing until heated through.
  6. Cook for a few more minutes to meld flavors and wilt spinach.
  7. Garnish with toasted sesame seeds before serving.

Notes

Pre-chop your veggies to speed up the cooking process. For leftovers, store in an airtight container in the fridge for up to 3 days.
