Cinnamon Roll Baked Oatmeal

A comforting breakfast treat that combines the flavors of cinnamon rolls with the heartiness of oats.

  • 2 cups old-fashioned rolled oats
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 cups milk (whole or nut milk)
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans or walnuts (optional)
  • 1/2 cup raisins or dried cranberries (optional)
  • Icing for drizzling (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×9 inch baking dish with butter or cooking spray.
  2. In a large bowl, combine the oats, baking powder, cinnamon, and salt. Mix well.
  3. In another bowl, whisk together the milk, brown sugar, melted butter, eggs, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. If using nuts or dried fruit, fold them into the mixture.
  6. Transfer the mixture into the prepared baking dish and spread evenly.
  7. Bake for 30-35 minutes, or until the top is set and lightly golden.
  8. Let it cool slightly, then drizzle icing over the top before serving.

Notes

Store leftovers in an airtight container for up to 5 days; it also freezes well.
