Ditalini Pasta with Caramelized Shallots and Roasted Garlic

A comforting dish featuring silky ditalini pasta combined with sweet caramelized shallots and earthy roasted garlic.

  • 8 oz ditalini pasta
  • 4 shallots, chopped
  • 1 head garlic, roasted
  • ½ cup grated Parmigiano cheese
  • 2 tbsp aged balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the pasta in boiling salted water until al dente, about 8-10 minutes. Drain, reserving some pasta water.
  2. In a skillet, heat olive oil over medium heat; add shallots and salt, cooking until caramelized, about 10 minutes.
  3. Add minced garlic to the skillet; sauté for 2 minutes until fragrant.
  4. In a mixing bowl, combine pasta, shallots, and garlic; toss to coat.
  5. Stir in Parmigiano cheese and balsamic vinegar, mixing well.
  6. Season with salt and pepper, adjusting with reserved pasta water if needed.
  7. Serve warm, garnished with extra Parmigiano and olive oil, if desired.

Notes

For a vegan option, substitute the cheese with nutritional yeast.
