Ingredients
Scale
1 1/4 cups all-purpose flour
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1/4 cup ice water
6–7 medium Granny Smith or Honeycrisp apples, peeled and sliced
1/2 cup granulated sugar
1/4 cup brown sugar
2 tablespoons all-purpose flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
3/4 cup all-purpose flour
1/3 cup brown sugar
1/4 cup granulated sugar
1/2 cup unsalted butter, cold and cubed
Optional: 1/4 cup chopped walnuts or oats
Instructions
Prepare the Crust: In a large bowl, whisk together flour and salt. Cut in cold butter until coarse crumbs form. Gradually add ice water until dough comes together. Shape into a disc, wrap, and refrigerate for at least 1 hour.
Make the Apple Filling: Toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg, and lemon juice. Let sit for 15 minutes.
Create the Crumble Topping: Combine flour, brown sugar, and granulated sugar. Cut in cold butter until clumpy. Stir in walnuts or oats if using.
Assemble the Pie: Preheat oven to 375°F (190°C). Roll out dough to fit a 9-inch pie pan. Pour apple filling into crust, topping generously with crumble.
Bake the Pie: Bake for 50-60 minutes until golden and bubbly. Cool for at least 1 hour before slicing and serving.
Notes
Keep everything cold for a flaky crust. Customize flavors with additional spices or nuts.
