Instructions
Crust: Mix crumbs, sugar, and butter. Press into 9-inch pie plate. Chill 1 hour.
Prepare Berries: Halve 1 lb strawberries; arrange cut-side down in crust. Slice remaining 1 lb berries.
Make Glaze: In saucepan, whisk water, sugar, and cornstarch. Cook over medium heat, stirring constantly, until thick and clear (about 5 mins). Remove from heat; stir in lemon juice, vanilla, and food coloring if using.
Assemble: Pour hot glaze over sliced berries in bowl; gently fold to coat. Spoon over arranged berries in crust.
Chill: Refrigerate 4+ hours until set. Garnish with whipped cream, whole berries, and mint.
