  • 6 tbsp unsalted butter, melted
  • For the Filling:
  • 2 lbs fresh strawberries, hulled (reserve 6 for garnish)
  • 3/4 cup water
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 12 drops red food coloring (optional)
  • For Serving:
  • Whipped cream
  • Mint leaves

Instructions

  1. Crust: Mix crumbs, sugar, and butter. Press into 9-inch pie plate. Chill 1 hour.
  2. Prepare Berries: Halve 1 lb strawberries; arrange cut-side down in crust. Slice remaining 1 lb berries.
  3. Make Glaze: In saucepan, whisk water, sugar, and cornstarch. Cook over medium heat, stirring constantly, until thick and clear (about 5 mins). Remove from heat; stir in lemon juice, vanilla, and food coloring if using.
  4. Assemble: Pour hot glaze over sliced berries in bowl; gently fold to coat. Spoon over arranged berries in crust.
  5. Chill: Refrigerate 4+ hours until set. Garnish with whipped cream, whole berries, and mint.

Notes

  • Peak season tip: Use the ripest local strawberries
  • Clear glaze secret: Strain through sieve if cloudy
  • Make ahead: Crust keeps 2 days; assemble pie up to 8 hours before serving
  • Variation: Add 1/4 cup chopped basil to glaze for herbal twist
