Easy 5 Ingredient Lemon Posset

An elegant yet effortless dessert with just 5 ingredients – silky lemon custard with a perfect balance of tart and sweet. Sets beautifully without eggs or gelatin!

  • 2 cups (480ml) heavy cream
  • 2/3 cup (130g) granulated sugar
  • 2 lemons, zested and juiced (1/3 cup juice)
  • 1 tsp vanilla extract
  • Pinch of sea salt
  • Optional Garnish:
  • Fresh berries
  • Mint leaves
  • Shortbread cookies

Instructions

  1. In a saucepan, combine cream and sugar. Bring to a gentle boil over medium heat, stirring constantly until sugar dissolves.
  2. Boil for exactly 3 minutes (set a timer!), stirring occasionally to prevent scorching.
  3. Remove from heat. Stir in lemon zest, juice, vanilla, and salt (mixture will thicken slightly).
  4. Strain through a fine mesh sieve into serving cups or ramekins.
  5. Chill uncovered for at least 4 hours (or overnight) until firmly set.
  6. Serve cold with berries and cookies on the side.
