2 cups (480ml) heavy cream
2/3 cup (130g) granulated sugar
2 lemons, zested and juiced (1/3 cup juice)
1 tsp vanilla extract
Pinch of sea salt

Instructions
In a saucepan, combine cream and sugar. Bring to a gentle boil over medium heat, stirring constantly until sugar dissolves.
Boil for exactly 3 minutes (set a timer!), stirring occasionally to prevent scorching.
Remove from heat. Stir in lemon zest, juice, vanilla, and salt (mixture will thicken slightly).
Strain through a fine mesh sieve into serving cups or ramekins.
Chill uncovered for at least 4 hours (or overnight) until firmly set.
Serve cold with berries and cookies on the side.
