  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg or 1 flax egg (for a vegan option)
  • 1/3 cup maple syrup or honey
  • 1/4 cup almond butter or any nut/seed butter
  • 1/2 teaspoon vanilla extract
  • 1/2 cup milk (dairy or non-dairy)
  • 1 1/4 cups diced apples (peeled or unpeeled)
  • Optional: 1/4 cup chopped walnuts, raisins, or chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line an 8×8-inch square baking pan with parchment paper or lightly grease it.
  3. In a large bowl, stir together the rolled oats, ground cinnamon, baking powder, and salt.
  4. In a separate bowl, whisk together the egg (or flax egg), maple syrup, almond butter, vanilla extract, and milk until smooth.
  5. Pour the wet mixture into the dry mixture and stir gently until just combined.
  6. Fold in the diced apples and any optional ingredients like walnuts or raisins.
  7. Transfer the mixture into the prepared baking pan and spread it evenly.
  8. Bake for 25 to 30 minutes, or until golden brown and a toothpick comes out clean.
  9. Let cool for 10-15 minutes before transferring to a wire rack to cool completely before slicing into 9 bars.
