Easy Authentic Chicken Marsala

A cozy, one-pan dish featuring tender chicken breasts in a rich sauce made with earthy mushrooms and sweet Marsala wine, perfect for weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 3 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1 cup chicken broth
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped

Instructions

  1. Season both sides of the chicken breasts with salt and pepper, then dredge in flour, shaking off excess.
  2. Heat olive oil in a large skillet over medium heat. Cook the chicken until golden brown, about 5-7 minutes per side.
  3. Remove chicken from the pan and set aside.
  4. Add sliced mushrooms to the skillet and cook until softened, about 5-6 minutes.
  5. Pour in Marsala wine and scrape up any bits from the pan, simmering for 2 minutes.
  6. Stir in chicken broth, return chicken to skillet, and simmer until cooked through, about 10 minutes.
  7. Blend in unsalted butter until melted, then garnish with fresh parsley before serving.

For best results, let chicken come to room temperature before cooking. You can customize this dish with different proteins or add-ins like sun-dried tomatoes or capers.
