Satisfy your cravings with these Easy Cheesy Meatball Subs, a comforting and delicious dish featuring tender meatballs in marinara sauce, topped with gooey cheese and served on crusty rolls.

  • 1 lb ground beef or a mix of beef and pork
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated onion
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 cups marinara sauce
  • 4 hoagie or sub rolls
  • 1 1/2 cups shredded mozzarella cheese
  • 4 slices provolone cheese (optional)
  • 1/4 cup grated parmesan cheese
  • 1 tbsp butter (optional, for toasting rolls)
  • Fresh basil or parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the ground meat, breadcrumbs, egg, grated onion, minced garlic, Italian seasoning, salt, and black pepper. Mix until just combined.
  3. Roll the mixture into 1 to 1.5-inch meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 18 to 20 minutes, or until browned and cooked through.
  5. In a large saucepan, bring the marinara sauce to a simmer, then add the baked meatballs and let simmer for 10 to 15 minutes.
  6. While the meatballs simmer, split the hoagie rolls open and brush the insides with butter; toast them in the oven for 3 to 5 minutes.
  7. Spoon the meatballs and marinara into each toasted roll, then top generously with shredded mozzarella and optional provolone cheese.
  8. Place the assembled subs under the broiler for 2 to 3 minutes, until the cheese is melted and bubbly.
  9. Sprinkle with grated parmesan cheese and garnish with fresh basil or parsley before serving.

Notes

For a spicier version, add crushed red pepper to the meatball mixture.
