  • 1 tsp vanilla extract
  • 1 cup (240ml) heavy cream, cold
  • For Topping:
  • 21 oz (595g) can cherry pie filling
  • 1 tbsp lemon juice
  • 1/4 tsp almond extract (optional)

Instructions

  1. Make crust: Mix crumbs, sugar, and butter. Press firmly into 9×13-inch pan. Chill 15 minutes.
  2. Beat filling: Whip cream cheese until smooth. Add powdered sugar and vanilla; beat until creamy.
  3. Whip cream: In separate bowl, whip heavy cream to stiff peaks. Fold into cream cheese mixture.
  4. Assemble: Spread filling over crust. Chill 4 hours or overnight.
  5. Add topping: Mix cherry filling with lemon juice and almond extract. Spread over chilled cheesecake layer.
  6. Serve: Cut into squares. Keep refrigerated until serving.
