Easy Cranberry Orange Bread with Orange Glaze

A delightful quick bread that combines tart cranberries and invigorating orange zest, finished with a luscious orange glaze. Perfect for holiday brunches or cozy mornings.

  • 2 cups all-purpose flour
  • 1 cup fresh cranberries, chopped
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup orange juice
  • 1/4 cup orange zest
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup powdered sugar (for glaze)
  • 23 tbsp orange juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Cream together butter and sugar in a large bowl until light and fluffy.
  3. Beat in the eggs, one at a time.
  4. Stir in the orange juice and zest.
  5. In another bowl, combine the flour, baking powder, baking soda, and salt. Whisk together.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in the chopped cranberries.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 50-60 minutes, or until a toothpick comes out clean.
  10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack.
  11. For the glaze, whisk powdered sugar and orange juice until smooth and drizzle over the cooled bread.

Storage Instructions: Store at room temperature for up to 3 days; can be frozen for up to 3 months.
