Easy Oven Roasted Chickpeas

A quick and easy recipe for irresistibly crunchy oven roasted chickpeas, perfect for snacks, salads, or appetizers.

  • 2 (15oz) cans low-sodium chickpeas, drained and rinsed
  • 12 tablespoons olive oil or avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt + more for topping
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Drain and rinse the chickpeas, then pat them dry and let them sit on a kitchen towel for 5-10 minutes.
  3. In a small bowl, mix chili powder, garlic powder, onion powder, cumin, salt, and black pepper.
  4. Drizzle olive oil over the chickpeas and toss to coat evenly.
  5. Sprinkle with the seasoning mix and toss again.
  6. Spread chickpeas in a single layer on a baking sheet and roast for 25-30 minutes, stirring every 10 minutes.
  7. Allow to cool for 5-10 minutes before serving with a sprinkle of sea salt.

Notes

For extra crunch, roast for an additional 5-10 minutes. Store leftovers in an airtight container for up to 3 days.
