Easy Ground Beef Zucchini Boats

A delightful blend of roasted zucchini filled with savory ground beef, aromatic spices, and melted cheese, these Easy Ground Beef Zucchini Boats are the perfect comfort food for any occasion.

Ingredients

  • 4 medium zucchinis
  • 1 pound lean ground beef (85% or 90%)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozzarella and cheddar mix)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice zucchini in half lengthwise and scoop out the center to form boats. Brush cut sides with olive oil and pre-bake for 5-7 minutes.
  3. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, then add garlic and cook until fragrant.
  4. Add ground beef to the skillet and cook until browned, about 5-7 minutes. Drain excess fat.
  5. Stir in tomato sauce, Italian seasoning, paprika, and season with salt and pepper. Simmer for 5 minutes.
  6. Fill each zucchini half with the beef mixture and top with shredded cheese.
  7. Bake for 15 minutes until cheese is melted and golden.
  8. Garnish with fresh herbs and serve immediately.

Notes

For added depth of flavor, consider using smoked paprika. Keep leftovers in the fridge for up to 3 days.
