1/2 cup (100g) granulated sugar
1/4 cup (55g) light brown sugar, packed
2 tbsp lemon juice
2 tbsp cornstarch
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground allspice
Pinch of salt
1 tbsp unsalted butter
1 cup (240ml) apple cider or water
1 tsp vanilla extract
Instructions
Prep apples: Toss sliced apples with lemon juice in large bowl to prevent browning.
Mix dry ingredients: In separate bowl, whisk sugars, cornstarch, spices, and salt.
Cook: Melt butter in large skillet over medium heat. Add apples and cider/water. Sprinkle sugar mixture evenly over top. Stir gently to combine.
Thicken: Cook 8-10 minutes, stirring occasionally, until apples are slightly softened and liquid becomes glossy and thick (should coat spoon).
Finish: Remove from heat. Stir in vanilla. Cool 15 minutes before using in pies, or cool completely for storage.
Notes
Apple options: Use 3 firm (Granny Smith) and 3 sweet (Honeycrisp, Fuji) apples for balanced flavor
No cornstarch? Substitute 4 tsp instant tapioca or 2 tbsp flour
